Sunday Night Dinner
Sunday night at the nagel bagels! Try this quick healthy dinner the whole family will enjoy. Kale salad dressed in a balsamic vinaigrette with saffron polenta. Recipe below!
a few handfuls of organic kale, arugala and basil
avocado
tomato
mixed bean sprouts
pomegranates
bocconcini (optional)
garlic
dijon mustard
balsamic vinegar
extra virgin olive oil
Finely chop up the garlic and mix in the mustard, balsamic vinegar and olive oil using a whisk. Toss with the above ingredients.
Saffron polenta
1 1/2 cups polenta
4 cups water
good pinch of saffron
salt and pepper
Bring water to a boil and add in the polenta slowly. Simmer for about thirty minutes, stirring occasionally. Add saffron and seasoning. Transfer to an oiled pie dish and let sit for another thirty minutes. Turn over onto a plate and serve!
